Ingredients:
- 1 lb lean ground beef
- 1 packet (30g) taco seasoning
- 1 can (14.5 oz) diced tomatoes with green chilies
Instructions:
- Place a 12-inch cast iron skillet over medium-high heat until a drop of water dances on the surface. Add the ground beef in large chunks and let sit undisturbed for 3–4 minutes to form a mahogany-colored crust, then break and brown until no pink remains.
- Sprinkle the taco seasoning evenly over the browned beef and stir for 60 seconds to toast the spices and awaken the aromatic oils.
- Pour in the undrained diced tomatoes and green chilies, stirring to deglaze the pan and lift the caramelized brown bits (fond) back into the meat.
- Lower heat to medium and simmer for 8–10 minutes, stirring occasionally, until the liquid reduces by half and transforms into a thick, glossy glaze.
