Ingredients:

  • 1 lb lean ground beef (90/10)
  • 2 tbsp avocado oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • 1/2 tsp crushed red pepper flakes
  • 3 medium zucchini, spiralized
  • 2 green onions, thinly sliced
  • 1 tbsp sesame seeds

Instructions:

  1. Heat avocado oil in a large skillet over medium high heat. Add the ground beef, pressing it flat into the pan. Cook undisturbed for 3–4 minutes until a dark brown crust forms.
  2. Break the meat apart with a spatula. Cook for another 2 minutes until fully browned.
  3. Stir in the minced garlic and grated ginger. Sauté for 30 seconds until you smell the fragrance.
  4. Pour in the soy sauce, honey, sesame oil, and red pepper flakes. Stir constantly for 1–2 minutes until the sauce thickens into a glossy coating.
  5. Turn the heat to high.
  6. Add the spiralized zucchini to the skillet.
  7. Using tongs, toss the noodles gently for exactly 2 minutes until vibrant green and slightly softened.
  8. Remove from heat immediately.
  9. Fold in the sliced green onions.
  10. Garnish with sesame seeds.
