Ingredients:
- 1 lb lean ground beef (90/10)
- 2 tbsp avocado oil
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp toasted sesame oil
- 1/2 tsp crushed red pepper flakes
- 3 medium zucchini, spiralized
- 2 green onions, thinly sliced
- 1 tbsp sesame seeds
Instructions:
- Heat avocado oil in a large skillet over medium high heat. Add the ground beef, pressing it flat into the pan. Cook undisturbed for 3–4 minutes until a dark brown crust forms.
- Break the meat apart with a spatula. Cook for another 2 minutes until fully browned.
- Stir in the minced garlic and grated ginger. Sauté for 30 seconds until you smell the fragrance.
- Pour in the soy sauce, honey, sesame oil, and red pepper flakes. Stir constantly for 1–2 minutes until the sauce thickens into a glossy coating.
- Turn the heat to high.
- Add the spiralized zucchini to the skillet.
- Using tongs, toss the noodles gently for exactly 2 minutes until vibrant green and slightly softened.
- Remove from heat immediately.
- Fold in the sliced green onions.
- Garnish with sesame seeds.
