Instructions:
- In a large mixing bowl, beat the softened cream cheese and Greek yogurt until the mixture is smooth and velvety. Fold in the shredded cheddar, minced chives, garlic powder, and salt using a spatula until evenly distributed.
- Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for 1 hour to ensure the base is firm enough to roll.
- Using a small cookie scoop, portion out 1-tablespoon mounds of the cheese mixture. Roll them quickly between your palms to form smooth spheres.
- Roll each ball in chosen coatings—toasted pecans, cranberries, or parsley—until fully enveloped, then place on a parchment-lined baking sheet.
