Ingredients:
- 1 lb large shrimp, peeled and deveined
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp avocado oil
- 1/3 cup honey
- 2 tbsp soy sauce
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1/2 tsp ginger, grated
Instructions:
- Pat the shrimp completely dry with paper towels. Note: Any leftover water will prevent browning. Season them with salt and pepper.
- Heat avocado oil in a 12 inch skillet over medium high heat. Wait until the oil shimmers (about 2-3 minutes).
- Add shrimp in a single layer. Cook undisturbed for 1-2 minutes until golden brown edges appear.
- Flip the shrimp and cook for another minute. Remove them from the pan and set aside on a plate. Note: They should be slightly undercooked at this stage.
- Lower the heat to medium. Stir in minced garlic and cook for 30 seconds until it smells fragrant but isn't brown.
- Pour in the honey, soy sauce, lemon juice, and grated ginger.
- Whisk constantly as the sauce bubbles. Simmer for 2-3 minutes until the sauce reduces into a syrupy consistency.
- Return the seared shrimp to the skillet.
- Toss rapidly for 1-2 minutes, ensuring every shrimp is thoroughly coated in the glaze.
- Remove from heat immediately to avoid overcooking.
