Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp avocado oil
  • 1/3 cup honey
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1/2 tsp ginger, grated

Instructions:

  1. Pat the shrimp completely dry with paper towels. Note: Any leftover water will prevent browning. Season them with salt and pepper.
  2. Heat avocado oil in a 12 inch skillet over medium high heat. Wait until the oil shimmers (about 2-3 minutes).
  3. Add shrimp in a single layer. Cook undisturbed for 1-2 minutes until golden brown edges appear.
  4. Flip the shrimp and cook for another minute. Remove them from the pan and set aside on a plate. Note: They should be slightly undercooked at this stage.
  5. Lower the heat to medium. Stir in minced garlic and cook for 30 seconds until it smells fragrant but isn't brown.
  6. Pour in the honey, soy sauce, lemon juice, and grated ginger.
  7. Whisk constantly as the sauce bubbles. Simmer for 2-3 minutes until the sauce reduces into a syrupy consistency.
  8. Return the seared shrimp to the skillet.
  9. Toss rapidly for 1-2 minutes, ensuring every shrimp is thoroughly coated in the glaze.
  10. Remove from heat immediately to avoid overcooking.
