Ingredients:

  • 1 cup Kodiak Cakes Buttermilk Power Cakes mix
  • 1/4 cup rolled oats
  • 1 tsp ground cinnamon
  • 3/4 cup whole milk
  • 1/4 cup plain Greek yogurt
  • 1 large egg, separated
  • 1 tsp pure vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the Kodiak Cakes mix, rolled oats, and cinnamon until well combined.
  2. In a separate medium bowl, whisk together the whole milk, Greek yogurt, vanilla extract, and the single egg yolk until smooth.
  3. In a third clean, grease-free bowl, whisk the egg white vigorously until stiff peaks form.
  4. Pour the wet milk mixture into the dry Kodiak mixture. Stir gently with a spatula until just combined; do not overmix.
  5. Carefully fold the whipped egg white into the batter using a silicone spatula until no large white streaks remain. Allow the batter to rest for 5 minutes.
  6. Heat a non-stick griddle over medium heat. Pour 1/4 cup of batter per pancake. Cook until bubbles form on the surface and edges look set, then flip and cook until golden brown.
