Ingredients:

  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1/2 tsp salt
  • 1 large egg
  • 1/3 cup milk
  • 1/3 cup sour cream
  • 4 tbsp unsalted butter, melted
  • 2 tbsp honey

Instructions:

  1. Preheat oven to 400°F (200°C) with a 10-inch cast iron skillet inside. Once hot, remove the skillet and swirl in a portion of the melted butter to coat the bottom and sides.
  2. In a large mixing bowl, whisk together the egg, milk, sour cream, honey, and the remaining melted butter until smooth.
  3. Gently stir in the Jiffy mix and salt using a rubber spatula. Fold only until the streaks of flour disappear; do not overmix.
  4. Pour the batter into the hot skillet, smooth the top, and bake for 20–25 minutes until a toothpick comes out clean and edges are deep golden brown.
