Ingredients:
- 1 box (8.5 oz) Jiffy Corn Muffin Mix
- 1/2 tsp salt
- 1 large egg
- 1/3 cup milk
- 1/3 cup sour cream
- 4 tbsp unsalted butter, melted
- 2 tbsp honey
Instructions:
- Preheat oven to 400°F (200°C) with a 10-inch cast iron skillet inside. Once hot, remove the skillet and swirl in a portion of the melted butter to coat the bottom and sides.
- In a large mixing bowl, whisk together the egg, milk, sour cream, honey, and the remaining melted butter until smooth.
- Gently stir in the Jiffy mix and salt using a rubber spatula. Fold only until the streaks of flour disappear; do not overmix.
- Pour the batter into the hot skillet, smooth the top, and bake for 20–25 minutes until a toothpick comes out clean and edges are deep golden brown.
