Ingredients:
- 1 cup (125g) all-purpose flour
- 1 tsp (5g) baking powder
- 1 tsp (2g) baking soda
- 2 tsp (5g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/2 tsp (3g) salt
- 1/2 cup (115g) vegetable oil
- 1 cup (200g) granulated sugar
- 4 large eggs
- 1 can (15 oz / 425g) pumpkin puree
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (57g) unsalted butter, softened
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (180g) powdered sugar
- 1 pinch (1g) salt
Instructions:
- Preheat oven to 350°F (175°C). Grease a 10x15 jelly roll pan and line it with parchment paper, leaving an overhang on the sides.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Beat the vegetable oil and granulated sugar until pale. Add eggs one at a time, beating well after each addition, then stir in the pumpkin puree until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Spread the batter evenly into the prepared pan and bake for 15 minutes.
- While the cake is still warm, carefully remove it from the pan and roll it up in a clean kitchen towel to set the memory of the cake. Allow it to cool completely.
- Prepare the filling by beating softened cream cheese and butter together until smooth. Mix in vanilla extract, powdered sugar, and a pinch of salt.
- Unroll the cooled cake, spread the cream cheese filling evenly across the surface, and roll the cake back up tightly.
- Chill the cake in the refrigerator for 2 hours to ensure filling stability before slicing.
