Ingredients:
- 1 cup (170g) uncooked quinoa, rinsed
- 2 cups (475ml) water or low-sodium vegetable broth
- 1 can (15 oz / 425g) chickpeas, drained and patted dry
- 1 tbsp (15ml) extra virgin olive oil
- 1/2 tsp (3g) smoked paprika
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1.5g) sea salt
- 2 cups (60g) shredded kale or baby spinach
- 1 cup (150g) cherry tomatoes, halved
- 1 cucumber (300g), diced
- 1 large (150g) avocado, sliced
- 1/4 cup (30g) pumpkin seeds, toasted
- 1/4 cup (60ml) tahini
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (15ml) maple syrup
- 1 clove (5g) garlic, minced
- 3 tbsp (45ml) warm water
Instructions:
- Combine rinsed quinoa and water or broth in a saucepan. Bring to a boil, then cover and simmer on low for 15 minutes until water is absorbed.
- Remove quinoa from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
- Preheat oven to 400°F (200°C).
- Toss drained chickpeas on a sheet pan with olive oil, smoked paprika, garlic powder, and salt.
- Roast chickpeas for 15-20 minutes, shaking the pan halfway through, until golden brown.
- In a small bowl, whisk together tahini, lemon juice, maple syrup, and minced garlic.
- Slowly whisk in warm water one tablespoon at a time until the dressing is a velvety, pourable cream.
- Divide cooked quinoa evenly among 4 bowls.
- Arrange shredded kale, cherry tomatoes, diced cucumber, and roasted chickpeas in sections atop the quinoa.
- Place avocado slices in the center and sprinkle with toasted pumpkin seeds.
- Drizzle the lemon-tahini dressing over each bowl immediately before serving.
