Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.2g) baking powder

Instructions:

  1. Preheat your oven to 350°F (175°C). Line an 8 inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar.
  3. Add the eggs one at a time, whisking vigorously until the batter becomes glossy and smooth.
  4. Sift in the cocoa powder, all purpose flour, salt, and baking powder.
  5. Using a spatula, gently fold the dry ingredients into the wet mixture. Stop as soon as the last streak of flour disappears to avoid overmixing.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 30–35 minutes until the edges are firm but the center has a slight jiggle.
  8. Remove from the oven. A toothpick inserted should come out with a few moist crumbs, not wet batter.
