Meet David Okonjo

I'm David, and my journey into specialized cooking started when several members of my family developed different dietary intolerances. Suddenly, cooking the way I always had wasn't an option. Instead of seeing this as a limitation, I saw it as a culinary puzzle waiting to be solved. I dove headfirst into the world of alternative ingredients and haven't looked back since.

My Culinary Philosophy

• Inclusion is the Goal: The best meals are the ones everyone at the table can enjoy together. My goal is to create recipes that happen to be gluten-free or dairy-free, but taste so good nobody even notices what's missing.
• Understanding the "Why": I love the science of cooking. Understanding why gluten works the way it does, for example, helps me find the perfect combination of alternative flours to mimic its texture.
• Global Inspiration: Drawing from my Nigerian heritage and love for global cuisine, I enjoy introducing ingredients that might be new to some home cooks, showing how versatile and delicious they can be.

My Background

I'm an engineer by day, and I bring that same analytical, problem-solving mindset to my cooking. I've spent years testing, tweaking, and re-testing recipes to crack the code on how to make allergen-friendly food that doesn't taste like a compromise. I'm excited to share those discoveries with you.
